Niu she bing (牛舌餅/牛舌饼) (pinyin with tones: niú shé bǐng) is a kind of pastry which looks like an ox tongue. It is also made of flour, butter, sugar, and olive oil, just like other pastries. It does not contain any meat. There are two types of niu she bing which taste far apart. One is flaky outside and soft inside with sweet stuffing, which tastes like tai yang bing. This kind of niu she bing is one of the famous product in Lukang (鹿港), Changhua (彰化). The ogher kind of niu she bing is the specialty of Yilan (宜蘭), which is thin and crispy just like cookies.
