Dang gui mian (當歸麵/当归面) (pinyin with tones: dāng guī miàn), angelica noodle soup, is a common dish in vegetarian noodle shops in Taiwan. Sometimes people switch noodles to vermicelli, but it does not affect the taste of soup. The soup contains many Chinese herbal medicines such as ligustrazine (川芎), rehmennia (熟地), wolfberry (枸杞), and the most important angelica (當歸). Sometimes there are some vegetables on the side: shiitake (香菇), enokitake (金針菇), baby corn (玉米筍), and leafy vegetables. The essence of dang gui mian is the meat analogue, which tastes like soya chunks but in bigger size. This soya chunks will absorb the soup so it is juicy and has a nice texture.
