Oo Pe̍h Tshiat (黑白切) Assorted-Cut Foods
Oo peh tshiat (黑白切) (pinyin with tones: oo pe̍h tshiat) is a plate of assorted side dishes which you can choose from the display case. After you select the food you want, the owner will chop the food in cubes or slices, making it in bite size. With shredded ginger or chopped green onions on the side and thick soy sauce basted on the top, a plate of oo peh tshiat is ready to go.

There are usually hai dai (海帶, kelp), dou gan (豆乾, hard bean curd), lu dan (滷蛋, spiced corned egg), you dou fu (油豆腐, fried bean curd), zui bian rou (嘴邊肉, pork jowl), and fen chang (粉腸, pork intestine), just to name a few. There are no shops only sell oo peh tshiat; it is usually served in noodles shops, diners, and vegetarian noodles shops.
