Liang ban xiao huang gua (涼拌小黃瓜/凉拌小黄瓜) (pinyin with tones: liáng bàn xiǎo huáng guā) is a crispy, appetizing, and refreshing cold dish. You can find it in noodle shops, diners, or even in fridge of every household because it is so easy to make.
How To Make Liang Ban Xiao Huang Gua (涼拌小黃瓜)?
First, wash the cucumbers and cut off the
top and the end. Crush the cucumbers with a knife and cut them into pieces. (Or
you can cut first and then crush them.) Second, add sugar and mix them
together; and then add salt, minced garlic, rice vinegar, chopped chili peppers,
and sesame oil and mix them well. The proportion of cucumbers to sugar to rice vinegar
is around 6:1:1; the other condiments and seasonings you can add as you like. Last,
refrigerate it for 3 to 6 hours. The longer you let stand, the tangy it will
be.
