Lu rou fan (滷肉飯/卤肉饭) (pinyin with tones: lǔ ròu fàn), also called rou zao fan (肉燥飯/肉燥饭) (pinyin with tones: ròu zào fàn) in some places, is the most common and popular snack in Taiwan’s restaurants. Lu rou fan is a small bowl of rice with some braised pork on it. Sometimes it is served with a stewed egg, a braised tofu, or a slice of pickle.
Lu Rou Fan (滷肉飯) VS. Rou Zao Fan (肉燥飯)
There are slightly differences between lu rou fan and rou zao fan. Firstly, the braised pork contains much fat in lu rou fan while in rou zao fan, it uses lean meat. Secondly, the pork is cut in dice or batonnet shape in lu rou fan, making each small piece consist of fat and lean part of pork. The meat in rou zao fan, on the other hand, is minced pork. This is why rou zao fan is translated as minced pork rice as well. Another thing is that lu rou fan exists in northern and central Taiwan whereas rou zao fan mostly appears in southern Taiwan. (“Lu rou fan” in southern Taiwan means khong rou fan (炕肉飯).)

How To Cook?
Cut the pork for sauté, and then add some fried shallot, scallion, crystal sugar, white pepper, soy sauce, wu xiang fen (五香粉, oriental special five spices), and rice wine (米酒) to stir fry. Later, put all the ingredients into a caldron and stew with some water. Sometimes it is cooked with shiitake mushrooms, soy-sauce pickled cucumbers, boiled eggs, and you dou fu (油豆腐, oily bean curds). The cooking methods, cooking time, sauce, and ingredients may differ depending on each restaurant’s “secret recipe”, so the taste and flavor may vary.
Where Can I Find It?
Lu rou fan / rou zao fan is such an inseparable staple to Taiwanese that you can find it in noodle shops, diners, restaurants, bento shops, and even convenient stores all over Taiwan. The importance of lu rou fan / rou zao fan to Taiwanese can never be too much.
