San bei ji (三杯雞/三杯鸡) (pinyin with tones: sān bēi jī), also known as three-cup chicken, is a must-have cuisine in every re chao dian (熱炒店, stir fry restaurant). It goes so well with rice that there are other dishes with this three-cup sauce such as san bei zhong juan (三杯中卷, three-cup neritic squid) and san bei xing bao gu (三杯杏鮑菇, three-cup king oyster mushroom). You can also find them in re chao dian.
The Name of San Bei Ji (三杯雞)
San bei (三杯) literally means “three cups,” which are a cup of soy sauce, a cup of rice wine, and a cup of sesame oil. These three ingredients are the most important essence of san bei ji. But to make this savory dish, these three cups are not enough. Ginger, garlic, and basil are imperative ingredients. Others like sugar and chili peppers are frequently used to make the dish zestier.
