Dan bing (蛋餅/蛋饼) (pinyin with tones: dàn bǐng) is one of the most famous Taiwanese breakfasts. It is translated as egg wrap, Taiwanese egg crepe, or breakfast burrito. Every breakfast shop, no matter traditional or modern, has dan bing on their menu. From the original plain flavor, only crepe with egg, to basil, rou song (肉鬆, pork floss), corn, cheese, ham, hash browns, chicken steak, and mashed potatoes, there are hundreds of flavors you can choose. It is usually sliced into pieces and served with soy sauce, thick soy sauce, or their homemade special sauce. Of course, you can ask for white pepper or no any seasoning on it.
History Of Dan Bing (蛋餅)
This prestigious but humble dainty was slightly extravagant when invented. After 1949, veterans and their dependents relocated with KMT government from mainland China to Taiwan, where they also brought their eating habits and culture to. At first, they added an egg, the best nutritional food in an era of scarcity, to cong you bing (蔥油餅, scallion pancake); this was the predecessor of dan bing. Comparing to the chewy texture of cong you bing, Taiwanese used to the soft taste like rice, so they started to improve the dough by adding potato starch or sweet potato flour. The new dough which can be made without kneading has become a trend of dan bing. Since 1994, machine-made crusts sprung up all over Taiwan. Now the most commonly seen dan bing is made by this kind of crust.
