Da Chang Bao Xiao Chang (大腸包小腸/大肠包小肠) Taiwanese Sausage With Sticky Rice
Da chang bao xiao chang (大腸包小腸/大肠包小肠) (pinyin with tones: dà cháng bāo xiǎo cháng), Taiwanese sausage with sticky rice or called small sausage in large sausage, is one of the must-eat snacks in Taiwan’s night markets. Da chang (大腸), the large sausage, means nuo mi chang (糯米腸, glutinous rice sausage) and xiao chang (小腸), the small sausage, is xiang chang (香腸, pork sausage). Nuo mi chang is cut from top to end without cutting off and embraces the whole xiang chang; it just looks like hot dog with bun, so some people also called it Taiwanese hot dog. It is said that da chang bao xiao chang is created by Hakka in Hualien (花蓮).

Besides xiang chang, there are some condiments wrapped into nuo mi chang as well. There are no fixed collocations but most of the time there are garlic sprouts, sliced cucumbers, sliced gingers, cilantros, suan cai (酸菜, Chinese sauerkraut), and tshài póo nn̄g (菜脯蛋, fried eggs with preserved radish). For some stands, you can also choose the flavor of seasoning such as peanut powder, pepper, wasabi, garlic, spicy chili, or plain. It will be served in a paper bag so you can eat while strolling in night markets.
