Jiu cai he (韭菜盒) (pinyin with tones: jiǔ cài hé), or called jiu cai he zi (韭菜盒子) (pinyin with tones: jiǔ cài hé zi), is a palm-sized pan-fried pie filled with stuffing of leeks, glass noodles, eggs, and dried bean curd. It looks like a sealed pocket so it is named that way. All ingredients in jiu cai he are cut in small dice so it is easy to chew and bite off. Some jiu cai he contains dried shrimp or ground pork; some are made vegetarian. If you have any dietary restrictions, make sure what ingredients they use before buying. You can find jiu cai he in traditional breakfast shops or the stands that sell xian bing (餡餅, pan-fried pie).
