Pai Gu Su Mian (排骨酥麵/排骨酥面) Crispy Sparerib Noodle Soup
Pai gu su mian (排骨酥麵/排骨酥面) (pinyin with tones: pái gǔ sū miàn) is a bowl of noodle soup with pai gu su (排骨酥, crispy fried spareribs). It is a popular noodle soup in Fengyuan (豐原), Taichung (台中), which is also the place of origin of pai gu su mian. Pai gu su is marinated with soy sauce, some condiments, and seasonings before being deep fired. Then it will be put in a steamer till it becomes soft enough; this unique step differs from the snack pai gu su which is always crispy as other fried food.
