Run Bing Juan (潤餅卷/润饼卷) Steamed Spring Roll / Taiwanese Burrito
Run bing juan (潤餅卷/润饼卷) (pinyin with tones: rùn bǐng juǎn), or called run bing (潤餅), is a kind of chun juan (春捲, spring roll) which is filled with various of ingredients and wrapped like a Mexican burrito. Another well-known kind of chun juan is zha chun juan (炸春捲, fried spring roll), which is smaller in size and deep fired to gold and crispy crust. Run bing juan is usually sold in food trucks or stands on the street with kuah pau (刈包/割包), Taiwanese hamburger.
The Stuffing In Rùn Bǐng Juǎn (潤餅卷)
Run bing juan contains abounding ingredients such as shredded cabbages, shredded carrots, bean sprouts, shredded eggs, shredded dried bean curd, and shredded pork. You may find it that all these ingredients are “shredded” because they will fit the long-shaped run bing juan more. Another thing noteworthy is that the vegetables in run bing juan are all cooked and savored, so the only seasoning we add into run bing juan is peanut powder. Mostly it is mixed with sugar but sometimes you can ask for the unsweetened peanut powder for your run bing juan.
