Liang mian (涼麵/凉面) (pinyin with tones: liáng miàn) is basically cooled cooked noodles basted with special sauce, which usually is made of sesame sauce, soy sauce, sesame oil, and sugar. The classical liang mian has shredded cucumbers and shredded carrots on the side; some even have shredded eggs and shredded ham. The common way to eat it is to mix all the ingredients well with the noodles and the sauce. People in Taiwan have liang mian as breakfast, lunch, afternoon snack, dinner, and late night supper. You can find it in some liang mian shops, stands, and even in convenient stores.
