Suan ni bai rou (蒜泥白肉) (pinyin with tones: suàn ní bái ròu) is a popular cuisine with simple ingredients and cooking method. Bai rou (白肉) here means the meat is simply boiled without any seasoning. Suan ni bai rou usually uses pork belly, which has fat and lean part, and features slicing pork against the grain with the same thickness. Suan ni (蒜泥), the garlic sauce, is essential to this cuisine. Minced garlics and soy sauce are inevitable; besides, some people will add some minced ginger, rice vinegar, rice wine, chopped chili peppers, or sesame oil to the sauce. In order to make the color look good, some will sprinkle chopped green onions and shredded ginger on the top of the dish. You can find suan ni bai rou in most re chao dian (熱炒店, stir fry restaurant) and bian dang dian (便當店, bento shop).
