Zhu xie tang (豬血湯/猪血汤) (pinyin with tones: zhū xiě tang) is a bowl of soup with large diced pig’s blood curd. Zhu xie (豬血, pig’s blood curd) is also known as black tofu, black pudding, blood pudding. Some vendors provide special sauces and condiments such as chopped leeks with soy sauce, thick soy sauce, chili sauce, suan cai (酸菜, Chinese sauerkraut), and minced garlic that you can make your own dipping sauce for blood pudding or other pork offal. A bowl of zhu xie tang and a bowl of chao mian (炒麵, fried noodles) are a good match which is also a popular breakfast combination in the middle and the south of Taiwan.
