Chao Fan (炒飯) Fried Rice
Chao fan (炒飯) (pinyin with tones: chǎo fàn), fried rice, is a very common cuisine you can find everywhere in Taiwan. A classic chǎo fàn usually includes a kind of meat, eggs, and chopped green onion. In addition to salt, sometimes a certain sauce such as soy sauce, shacha sauce (沙茶醬), or XO sauce will be added to chao fan. With different ingredients, condiments, seasoning, and sauces, chao fan can be ever-changing.
Naming Of Chao Fan
(炒飯)
The meat of chao fan mainly decides how it is named, which is like “OO炒飯” or “OO蛋炒飯.” For example, xia ren chao fan (蝦仁炒飯) is shrimp fried rice; niu rou dan chao fan (牛肉蛋炒飯) is beef fried rice. If there is a certain sauce, the sauce may be shown in the name as well, such as sha cha rou si dan chao fan (沙茶肉絲蛋炒飯, shredded pork fried rice with shacha sauce).
