Chao Shui Lian (炒水蓮/炒水莲) Stir-Fried White Water Snowflake Stems |
Chao shui lian (炒水蓮/炒水莲) (pinyin with tones: chǎo Shuǐ Lián), stir-fried white water snowflake stems, is a popular dish in re chao dian (熱炒店/热炒店, stir fry restaurant) and some restaurants (especially Hakka restaurants). Chao shui lian is a kind of chao qing cài (炒青菜, stir-fired vegetables). It is usually stir-fried with shredded pork, shiikate mushrooms, or phua poo tsi (破布子) (Taiwanese: phuà pòo tsí), pickled cordia tree seeds.
Shui Lian (水蓮/水莲) In Taiwan
In Taiwan, most shui lian (水蓮/水莲, white water snowflakes) originate in Meinong District (美濃區), Kaohsiung (高雄), which is a place known for Hakka culture. Actually, shuǐ lián is one of the traditional Hakka ingredients just as phua poo tsi does.
「不是每家熱炒店都有炒水蓮,以前吃到這道菜通常都是在山上的野菜餐廳,所以現在只要在菜單上看到這道菜絕對必點!」——Mosa 自己說
