Ge li tang (蛤蜊湯/蛤蜊汤) (pinyin with tones: gé lí tāng), clam soup, or called jiang si ge li tang (薑絲蛤蜊湯) (pinyin with tones: jiāng sī gé lí tang), is a common home-cooked dish in Taiwan. The most important thing to make delicious ge li tang is to have fresh clams, which are easy to get in Taiwan, an island surrounded by the sea. Ge li tang usually does not have too much seasoning. Besides ge li (蛤蜊, clam), there are rice wine, shredded ginger, chopped green onions, and basils in the soup. Ge li tang can also be cooked with winter melons, loofahs, or pork ribs. You can find ge li tang in restaurants, diners, or re chao dian (熱炒店/热炒店, stir fry restaurant).
