Hong Zao Rou (紅糟肉) Fried Red Yeast Pork
Hong zao rou (紅糟肉) (pinyin with tones: hóng zāo ròu) is deep-fried pork belly marinated with some seasonings like wu xiang fen (五香粉, oriental special five spices), minced garlic, soy sauce, and the most important red yeast. After marinating hong zao rou in a fridge for 1 to two days, coat it with sweet potato flour and deep fry. Some hong zao rou has the aroma of rice wine and is usually cut in slices served on a plate. You can buy hong zao rou in traditional markets or order in restaurants and some diners.
