Jing du pai gu (京都排骨) (pinyin with tones: jīng dū pái gǔ) looks and tastes like tang cu pai gu (糖醋排骨, sweet and sour pork ribs), but there is still slightly difference between them. They are both marinated before deep fried and then stir fried with sauce. The key distinction consists in the sauce. Besides ketchup, which is used in both cuisines, jing du pai gu has a certain spicy soy sauce so it salty, spicy, and sweet. On the other hand, the essence of tang cu pai gu lies in rice vinegar, which gives it a sour taste along with sweetness. You can find these cuisines in Chinese or Cantonese restaurants.
