Pi dan dou fu (皮蛋豆腐) (pinyin with tones: pí dàn dòu fu) is a classic side dish you can find in noodle shops, restaurants, and diners. Pi dan dou fu is basically made of cold dou fu (豆腐, tofu) cut into large dice with pi dan (皮蛋, century egg / preserved egg) and topped with thick soy sauce. Sometimes there will be chopped green onions and rou song (肉鬆, pork floss) as well. This cool side dish is very appetizing and can balance the oiliness of food.
