Suan miao xian zhu rou (蒜苗鹹豬肉/蒜苗咸猪肉) (pinyin with tones: suàn miáo xián zhū ròu), or named suan miao chao xian zhu rou (蒜苗炒鹹豬肉/蒜苗炒咸猪肉), is quite popular in rè chǎo diàn (熱炒店/热炒店, stir fry restaurant). xian zhu rou (鹹豬肉/咸猪肉, salted pork) is one of the classic Hakka (客家) dishes, which is oily, salty, and savory. Suan miao (蒜苗, garlic sprout) can neutralize the saltiness and greasiness of pork, making this dish even more palatable.
