Uann kue (碗粿) (Taiwanese: uánn kué), savory rice pudding, is made from long grain rice flour with some ingredients inside or on the top. There are different ways of making uann kue in different regions in Taiwan. In the north, uann kue is a bowl of pure steamed long grain rice starch, which looks plain and white. Before serving, the owner will top it with stir-fried sauce with minced pork, shiikate, and tshai poo (菜脯, dried radish). In the south, the ingredients are placed in the bowl and steamed together with the long grain rice starch. After uann kue is well cooked, the sauce will be glazed on it. Some people put the sauce into the bowl and mix it with the long grain rice starch; this kind of uann kue looks darker.
