Can dou su (蠶豆酥/蚕豆酥) (pinyin with tones: cán dòu sū), broad bean crisp, is a traditional snack that people usually eat during Spring Festival or eat when having a drink. Can dou su is made of dried can dou (蠶豆/蚕豆, broad bean), which is soaked into water with some Chinese herbs like star anise (八角) and peppers, and then cut in the middle without cutting off before deep frying.
