Jiao Ma Ji (椒麻雞/椒麻鸡) Spiced Chicken With Chili Sauce
Jiao ma ji (椒麻雞/椒麻鸡) (pinyin with tones: jiāo má jī), spiced chicken with chili sauce, is fried chicken thigh on shredded cabbage basted with special chili sauce. The chicken is cut into thin strips so that it can absorb enough sauce. Jiao ma ji is a well-liked dish in Thai restaurants in Taiwan, but the interesting thing is that jiao ma ji is invented in Taiwan and you cannot find it in Thailand. It is also noteworthy that the dish “jiao ma ji” origins in Yunnan (雲南), China, but the chicken is boiled not deep fried.
