Shi mu yu tang (虱目魚湯/虱目鱼汤) (pinyin with tones: shī mù yú tāng), milkfish soup, has light and clear broth, some fillet, and shredded ginger in it. Shi mu yu tang focuses on the freshness and pureness of milkfish, so there is no too much seasoning and condiment. Milkfish in shi mu yu tang can be a slice of fish maw, with skin and less meat, or boneless fish strips. You can find shi mu yu tang in diners or restaurants; it is also a kind of home cooking.
