Ta xiang qie zi (塔香茄子) (pinyin with tones: tǎ xiāng qié zi), basil eggplant stir-fry, is actually a kind of Hakka cuisine, which is well-known for its saltiness, oiliness, and aroma. Eggplants are usually cooked, deep fired or boiled, before stir-fried so that eggplants will not be overcooked. Besides eggplants and basil, ta xiang qie zi sometimes contains sautéed minced pork which gives this dish another flavor. Ta xiang qie zi is popular in restaurants and re chao dian (熱炒店/热炒店, stir fry restaurant).
