Jiang si fen chang (薑絲粉腸) (pinyin with tones: jiāng sī fěn cháng), stir-fried pork chitterlings with shredded ginger, is also a kind of Hakka dish just like jiang si da chang (薑絲大腸, stir-fried pork intestine with shredded ginger). In addition to the different parts of pork offal that are used, jiang si fen chang has absorbed soy sauce fully so it has another flavor other than rice vinegar. You can find jiang si fen chang in Hakka restaurants and some re chao dian (熱炒店/热炒店, stir fry restaurant).
