Laing ban dou gan si (涼拌豆乾絲/凉拌豆干丝) (pinyin with tones: liáng bàn dòu gān sī) is a common appetizer that is served in almost every noodles shops and diners in Taiwan just like liang ban hai dai si (涼拌海帶絲, kelp salad). Liang ban dou gan si contains simply three ingredients: shredded dried bean curd, carrots, and celery. The cooking method is also very simple. Just blanch these ingredients, drain the water, and then add some condiments such as salt, white pepper, some sugar, and sesame oil. Mix them well and put it in the fridge for 2 to 3 hours till it is flavored. If you prefer the tender taste of dried bean curd, you can add some baking soda when blanching it. Liang ban dou gan si is a classic dish you should never miss when eating in noodle shops.
