Zha xia juan (炸蝦捲) (pinyin with tones: Zhá Xiā Juǎn), deep-fried shrimp roll, is a popular snack that is made of mix paste of shrimp, fish, and pork paste, which is then rolled up with wonton wrappers, breaded, and deep fried. Zha xia juan is especially famous in Tamsui (淡水) and Tainan (台南), where it is known zha xia juan originates in.

The taste and texture of zha xia jaun in Tamsui and Tainan are quite different. For the zha xia juan in Tamsui, the paste inside is smooth and the crust is thick and crispy. In Tainan, on the other hand, you can feel pieces of shrimp inside the paste. Besides, the skin of zha xia juan is very thin and the stuffing tastes juicy and plump. You can dip both kinds of zha xia juan into some sauces like garlic thick soy sauce, sweet chili sauce, ketchup, pepper salt, or just enjoy the original taste.
