Suan Mei (酸梅) Dried Salted Plums / Preserved Plums
Suan mei (酸梅) (pinyin with tones: suān méi) means dried salted plums or preserved plums. Suan mei can also be refered to as the fruit, plum, itself. Suan mei is a popular snack and appetizer because of its natural sourness. You can find suan mei sold in cans or packages in traditional markets, convenient stores, supermarkets, or some specialty shops. To make suan mei, it requires lots of salt, sugar, and some other herbs you like to preserve it. According to different types of suan mei, it takes from one day to one year to leave to marinate.
Applications Of Suan Mei (酸梅)
Besides eating suan mei alone, you can make it into juice like suan mei tang (酸梅湯, plum juice) or wu mei zhi (烏梅汁, smoked plum juice); you may also make it into a dish like suan mei pai gu (酸梅排骨, plum galzed pork ribs); it is also a good idea to add it into candies, cakes, and jellies, which will give the desserts a sour taste.
