Yu wan tang (魚丸湯) (pinyin with tones: yú wán tāng), fish ball soup, is one of the most common and popular soups in Taiwan. Yu wan (魚丸, fish ball) is made from different types of fish, depending on which type of fish is abundant in the local. The representatives of Taiwan’s yu wan are sha yu wan (鯊魚丸, shark fish ball) in Tamsui (淡水), gui tou dao yu wan (鬼頭刀, mahi-mahi fish ball) in the east of Taiwan, shi mu yu wan (虱目魚丸, milkfish ball) in Tainan (台南), and qi yu wan, (旗魚丸, swordfish ball) in Kaohsiung (高雄).


How To Make Yu Wan Tang (魚丸湯)?

First, boil the water and add some sliced ginger and rice wine. Second, put yu wan into the broth. When yu wan is floating on the top it means it is done. Before turning off the stove, you can add some chopped celery or cilantro which gives yu wan tang another fragrance.
