Tua Mi Kinn (大麵羹/大面羹) (Taiwanese: tuā mī kinn) looks like noodle soup but the noodles are alkaline and the soup is thick because of the noodle itself, which is quite different from chi rou geng (赤肉羹, pork thick soup). Tua mi kinn is an authentic delicacy in Taichung (台中), which is invented in the early retrocession of Taiwan. At that time, poor people just want to eat full so they add alkali powder (鹼粉) to make noodles expand. Nowadays, tua mi kinn is served with toppings such as dried salted radish, dried shrimp, ground pork, chopped leeks, and fried shallots. You can barely find tua mi kinn anywhere else in Taiwan but only Taichung.
Pronunciation Of “鹼” And “羹”
It is noticeable that the pronunciation of “鹼” in Taiwanese is the same as that of “羹” which is “kinn.” Therefore, there is a saying that this homophonic pun is how the name of “大麵羹” is given.
