Niu rou tang (牛肉湯/牛肉汤) (pinyin with tones: niú ròu tang) is beef bone broth, most of the time served with beef. Sometimes beef is stewed together from the beginning; other times it is blanched in beef soup right before serving to customers. Niu rou tang in most noodle shops is the former while Tainan (台南) is famous for the latter.

Niu rou tang in Tainan is usually served with a sauce dish of shredded ginger and soy sauce, with which you can dip beef and eat, and a bowl of white rice or rou zao fan (肉燥飯, braised pork on rice). In Tainan, you can find diners selling niu rou tang from early morning to late night, almost 24 hours, so you can enjoy niu rou tang for breakfast, lunch, dinner, or late night supper.
