O A Tsian (蚵仔煎) Oyster Omelette |
O a tsian (蚵仔煎) (Taiwanese: ô á tsian), known as oyster omelette, is one of the representative street foods of Taiwan. You can find it in night markets all over Taiwan. Full of fresh oysters, eggs, vegetables like bean sprouts and bok choy, and thickened with potato starch or sweet potato flour, each delectable o a tsian is made to order. The exclusive sauce is each store’s secret weapon to attract customers. The sauce of o a tsian is usually made of thick soy sauce, miso sauce, doubanjiang (豆瓣醬, soybean paste), and ketchup.
Family Of O A Tsian (蚵仔煎)
Some o a tsian stands sell not only o a tsian but also xia ren jian (蝦仁煎, shrimp omelette), hua zhi jian (花枝煎, cuttlefish omelette), zong he jian (綜合煎, hodgepodge omelette), which contains oysters, shrimps, and cuttlefish, and dan jian (蛋煎, omelette), which does not have any seafood. Another similar dish is o a chao dan (蚵仔炒蛋, scrambled eggs with oyster), which only contains eggs and oysters and no potato starch.
How To Pronounce O A (蚵仔)?
It is interesting that Taiwanese people always pronounce o a (蚵仔, oyster) in Taiwanese. We don’t pronounce the Taiwanese-to-Chinese word “蚵仔, é zǐ,” nor the formal Chinese word of oyster “牡蠣, mǔ lì.” Therefore, when we say “ô á tsian,” it is always in Taiwanese, but for the others like xia ren jian and hua zhi jian, are in Chinese.
