O A Chao Dan (蚵仔炒蛋) Scrambled Eggs With Oyster |
O a chao dan (蚵仔炒蛋) (ô á chǎo dàn), also called o a jian dan (蚵仔煎蛋), is scrambled eggs or fired eggs fried with oysters. It is a dish you can find in re chao dian (熱炒店, stir fry restaurants) or easily make at home. Unlike o a tsian (蚵仔煎, oyster omelette), which contains potato starch or sweet potato flour hence is a little bit sticky and chewy, o a dan simply has eggs and oysters which then has a tender taste. Another similar cuisine is hua dan xia ren (滑蛋蝦仁, scrambled eggs with shrimp) or called xia ren chao dan (蝦仁炒蛋). They both add seafood into stir-fried eggs.
How To Pronounce O A (蚵仔)?
It is interesting that Taiwanese people always pronounce o a (蚵仔, oyster) in Taiwanese. We don’t pronounce the Taiwanese-to-Chinese word “蚵仔, é zǐ,” nor the formal Chinese word of oyster “牡蠣, mǔ lì.” Therefore, when we say “ô á tsian,” it is always in Taiwanese, but for the others like xia ren jian and hua zhi jian, are in Chinese.
