Xiao Juan Mi Fen (小卷米粉) Rice Noodle Soup With Neritic Squid
Xiao juan mi fen (小卷米粉) (pinyin with tones: xiǎo juǎn mǐ fěn) is a bowl of thick rice noodle soup with fresh neritic squid. Xiao juan mi fen is one of the popular dishes in Tainan (台南). Although you may find it in other cities, this authentic cuisine originates in Tainan.
Types Of Mi Fen (米粉, Rice Noodles)
In general, there are two types of rice noodle, thick one and thin one. Thick rice noddle is usually cooked with soup like mi fen tang (米粉湯, rice noodle soup); and thin rice noddle is often fried with other ingredients like chao mi fen (炒米粉, fried rice noodles).
