Mi fen tang (米粉湯/米粉汤) (pinyin with tones: mǐ fěn tang) is a bowl of rice noodles (usually the thick ones) with pork ribs soup. Actually there are not just pork ribs but also zui bian rou (嘴邊肉, pork jowls), zhu fen chang (豬粉腸, pork intestine), radishes, and you dou fu (油豆腐, fried bean curd) cooked together with the soup. This is sort of traditional mi fen tang you can find in the north of Taiwan. But there are still other mi fen tang with special ingredients such as xiao juan mi fen (小卷米粉, rice noodles with neritic squid) and yu tou mi fen (芋頭米粉, rice noodles with taro).

 

Difference Between Mǐ Fěn Tang (米粉湯) And Mǐ Tái Mù (米苔目)

You may find out that the English translation of mi fen tang (米粉湯) and mi tai mu (米苔目) are almost the same. They are both made of rice, but mi fen tang contains more water so it looks a little bit translucent, while mi tai mu is whiter and has chewy texture. Another difference is that mi tai mu can be made into dry dish or sweet dessert, whereas thick mi fen (米粉, rice noodles) are only cooked with soup. But thin mi fen can be cooked with soup or stir-fried as dry dishes.
