You fan (油飯/油饭) (pinyin with tones: yóu fàn) is a traditional dish made of glutinous rice that you can find from small diners to wedding banquet restaurants. It is savory but not that salty so that you can eat it alone or with some thick soy sauce or sweet chili sauce. Sometimes you fan is served with la gao li cai gan (辣高麗菜乾, spicy pickled cabbage), which adds a crunchy texture to it. You fan tastes a little bit like mi gao (米糕, savory rice pudding), which is also a kind of delicacy made of glutinous rice.
How To Make You Fan (油飯)?
To make you fan, there are three main steps. First, wash the glutinous rice and steam it for 40 minutes. The proportion of glutinous rice to water is about 1:0.6. Second, stir fry the ingredients such as shredded pork, dried shrimp, shredded shiitake mushrooms, and dried shallots with soy sauce and some sesame oil. Third, mix the glutinous rice and the stir fry together until the color of the sauce stains on the rice evenly.
