Zheng jiao (蒸餃/蒸饺) (pinyin with tones: zhēng jiǎo) is a common snack you can see in the food trucks on the street or in diners or restaurants. Zheng jiao shares the same shape and ingredients with shui jiao (水餃, boiled dumpling) and jian jiao (煎餃, fried dumpling), but zheng jiao is cooked in a bamboo steamer or dian guo (電鍋, multi cooker).
Enjoy Zheng Jiao (蒸餃) In Two Ways
There are two popular ways to eat zheng jiao. The first one is to savor the original taste of itself including the fresh soup, rich filling, and soft but not soggy wrappers. The other way to enjoy zheng jiao is to dip it into sauce. The sauce basically has soy sauce, rice vinegar, and some condiments like chopped scallions, minced garlic, shredded ginger, and chili pepper. Sometimes you can make your own sauce you like at the diners.
