Chao Dong Fen (炒冬粉) Stir-Fried Glass Noodles
Chao dong fen (炒冬粉) (pinyin with tones: chǎo dōng fěn) is a common dish of dong fen (冬粉, cellophane noodles / glass noodles) which looks like transparent noodles. Chao dong fěn usually contains shredded cabbage, shredded carrots, shredded shiikate mushrooms, dried shrimps, and shredded pork or minced pork. The dark brown color of chao dong fěn is from soy sauce. You can find chao dong fen at food stands in traditional markets or near temples. This kind of stands sometimes sell you fan (油飯, steamed sticky rice) as well.
Ma Yi Shang Shu (螞蟻上樹, Ants Climbing A
Tree)
In restaurants, chao dong fen is named ma yi shang shu (螞蟻上樹, ants climbing a tree) because the minced pork is like ants while the glass noodles are like branches.
