Hu jiao bing (胡椒餅/胡椒饼) (pinyin with tones: hú jiāo bǐng) is a kiln-baked cake/bun filled with chopped green onions and minced pork with black pepper flavor. Different from rou bao (肉包, pork bun), hu jiao bing has thin and crispy crust strewn with white sesames. Besides, the filling of hu jiao bing contains lots of green onions to balance the greasiness of pork and spiciness of black pepper. Hu jiao bing is a popular street food you can find in the night markets or the stands on the streets. One of the famed hu jiao bing stands is in Raohe St. Night Market (饒河街夜市) in Taipei.

The Evolution Of Hu Jiao Bing (胡椒餅)
It is said that the predecessor of hu jiao bing is cong rou bing (蔥肉餅) which originates in Fuzhou (福州), Fujian (福建) in China. When early introduced to Taiwan, it was also called fú zhou bing (福州餅). The interesting thing is that the Taiwanese of fu zhou (福州) is “hok tsiu,” which sounds similar as the Taiwanese of hu jiao (胡椒) “hôo-tsio.” Since hu jiao bing has a strong flavor of black pepper, so it is naturally named like this.
