Ling Jiao (菱角) Water Caltrop
Ling jiao (菱角) (pinyin with tones: líng jiǎo), called water caltrop or water chestnut, is a kind of aquatic plants. In Taiwan there are three common ways to eat ling jiao. The first one is to boil it with some salt like shui zhu hua sheng (水煮花生, boiled peanut) and to savor the pure taste. Actually you can find some stands selling both ling jiao and shui zhu hua sheng in traditional markets or on the road side. The second one is to make it into ling jiao pai gu tang (菱角排骨湯, water caltrop with pork ribs soup) just as lian ou pai gu tang (蓮藕排骨湯, lotus roots with pork ribs soup) and shan yao pai gu tang (山藥排骨湯, yam with pork ribs soup). The other way to eat ling jiao is to coat it with batter and deep fry until golden brown. This snack is called ling jiao su (菱角酥, deep-fried water caltrop), which is well-known in Fengyuan (豐原), Taichung (台中).
