Ma la chou dou fu (麻辣臭豆腐) (pinyin with tones: má là chòu dòu fu) is a kind of stinky tofu, which is marinaded and stewed with some spices and sauces. Ma la chou dou fu is usually eaten with ma la guo (麻辣鍋, spicy hot pot), and the common ingredients are ya xie (鴨血, duck’s blood curd), pork intestine (豬腸/大腸), enokitake (金針菇), shiitake mushroom (香菇), and so forth. Sometimes ma la chou dou fu is also known as ya xie chou dou fu (鴨血臭豆腐, spicy stinky tofu with duck’s blood curd).
Family Of Chou Dou Fu (臭豆腐)
There are several kinds of chou dou fu you can find in Taiwan. Besides ma la chou dou fu, another popular one is zha chou dou fu (炸臭豆腐, fried stinky tofu), which is cut in triangular prism or cube. It is usually served with pickled cabbage and basted with homemade garlic soy sauce. Another similar kind is tan kao chou dou fu (炭烤臭豆腐, grilled stinky tofu), which also have pickled cabbage and barbecue sauce spread on the top; it is deep fired first and then grilled in a skewer. Since ma la chou dou fu, which contains much water and is softer than the other two, absorbs the spicy sauce and is cooked in a hot pot, it has a zesty taste and has stronger “stink” than the others.
