Bah uan (肉圓/肉圆) (Taiwanese: bah uân), known as “ba wan” or meatball mochi, is a traditional snack that originates in Changhua (彰化) in Taiwan. It is a fist-sized meatball wrapped with glutinous and chewy skin made of rice flour, sweet potato flour, and tapioca flour. Bah uan is just like big savory mua tsi (麻糬, mochi) which has nice and irresistible texture of the skin and full stuffing inside.

 

Types Of Bah Uan (肉圓)

There are mainly two types of bah uan according to cooking method: steamed and fried. Roughly speaking, fried bah uan can be found in the places north of Changhua; steamed bah uan, on the other hand, appears in the places south of Changhua (excluding Changhua). The stuffing of bah uan, however, is much the same, which usually includes pork, bamboo shoots, shiitake mushrooms, and shallots (red onion). Still, there are some distinctive bah uan in specific areas such as xia ren bah uan (蝦仁肉圓, shrimp meatball mochi) in Tainan (台南), hong zao bah uan (紅糟肉圓, red wine lees meatball mochi) in Jiufen (九份), New Taipei City (新北市), and hong qu bah uan (紅麴肉圓, red yeast rice meatball mochi) in Keelung (基隆).

 

Pronunciation Of Bah Uan (肉圓)

Bah uan is the pronunciation in Taiwanese and it is how most people call it. You can also pronounce it literally in Chinese “rou yuan.” Sometimes you can see it is written as “肉丸” since the pronunciation of “丸 (wan)” in Chinese sounds the same as “圓 (uan)” in Taiwanese.
