Jin sha xing bao gu (金沙杏鮑菇) (pinyin with tones: jīn shā xìng bào gū) is king oyster mushroom stir-fried with salted yolk. Sometimes xing bao gu (杏鮑菇, king oyster mushroom) is coated with batter and then deep fried before cooking; this can make salted yolk adhere easier to adhere to xing bao gu. Jin sha xing bao gu is an appetizing cuisine that people like to order in re chao dian (熱炒店/热炒店, stir fry restaurant).
What Is Jin Sha (金沙)?
Jin sha (金沙) literally means “golden sand,” which refers to the color and texture of xian dan huang (鹹蛋黃, salted yolk). There are other dishes use xian dan huang in cooking such as jin sha dou fu (金沙豆腐, fried tofu with salted egg yolk) and jin sha xia qiu (金沙蝦球, salted yolk prawn).
