Jin sha dou fu (金沙豆腐) (pinyin with tones: jīn shā dòu fu), fried tofu with salted egg yolk, is a popular dish in re chao dian (熱炒店/热炒店, stir fry restaurant). Only two main ingredients are needed to make this flavorful dish—tofu and salted egg yolk. First, chop egg tofu (or soft tofu) into dices and pan fry or deep fry them until golden brown. Pick them up and put them aside for later use. Second, mince salted duck egg yolk until it starts to bubble and becomes thick. Third, add some minced garlic, chopped chili peppers and green onions, and last, fried tofu, a delicious jin sha dou fu is done! It goes so well with rice but is not that salty so children and adults like it so much!
What Is Jin Sha (金沙)?
Jin sha (金沙) literally means “golden sand,” which refers to the color and texture of xian dan huang (鹹蛋黃, salted yolk). There are other dishes use xian dan huang in cooking such as jin sha xing bao gu (金沙杏鮑菇, fried tofu with salted egg yolk) and jin sha xia qiu (金沙蝦球, salted yolk prawn).
