Liang ban dou ya cai (涼拌豆芽菜) (pinyin with tones: liáng bàn dòu yá cài), bean sprout salad, is a kind of appetizers you can find in noodle shops and diners. Different from liang ban xiao huang gua (涼拌小黃瓜, pickled cucumber salad) which is made of raw cucmbers, the bean sprouts are blanched beforehand when making liang ban dou ya cai. You can blanch some shredded carrots or shredded black fungus as well to add colors to this dish. After draining them, just put the seasonings you like, such as salt, sugar, pepper, sesame oil, and even some minced garlic. A refreshing bean sprout salad is done!
