Liang ban mu er (涼拌木耳/凉拌木耳) (pinyin with tones: liáng bàn mù ěr) is an appetizer with sour and sweet taste. Its refreshing taste matches the salty and greasy dishes like lu rou fan (滷肉飯, braised pork on rice), ji rou fan (雞肉飯, shredded chicken on rice), and niu rou mian (牛肉麵, beef noodle soup)You can find it in Chinese restaurants, noodle shops, and diners.


Black And White Mu Er

Mu er (木耳), here referring to the black one, is translated as black fungus or cloud ear fungus because of its color and the shape. It is usually made into savory dishes, contrary to the white one which is usually made into desserts.


How To Make Liang Ban Mu Er (涼拌木耳)

To make liang ban mu er, there are only three steps. First, after rinsing mu er, blanch it for around 30 seconds, and then soak it in cold water. Second, add condiments like shredded ginger, minced garlic, and chopped chili pepper and some seasonings like soy sauce, rice vinegar, sugar, and some sesame oil. Last, mix them well and set in the fridge at least 2 hrs. Before eating, you can add some chopped green onion to increase the flavors.
