Zui bian rou (嘴邊肉/嘴边肉) (pinyin with tones: zuǐ biān ròu) (Taiwanese: tshuì phué bah) is pork jowl which is a common ingredient you can easily find in noodle shops or diners. It is part of Oo Peh Tshiat (黑白切, assorted-cut food) family which is simply boiled and served with thick soy sauce and some sliced ginger or chopped green onion. Zui bian rou is also usually made into chi rou tang (赤肉湯, lean pork soup). Another place you can find zui bian rou is at lu wei (滷味, soy sauce braised food) stands. It is braised with soy sauce and tastes great both in hot or cold.
