Lu Wei (滷味/卤味) Soy Sauce Braised Food
Lu wei (滷味/卤味) (pinyin with tones: lǔ wèi) is a popular street food in Taiwan. Lu wei basically uses soy sauce to braise all ingredients like lu dan (滷蛋, spiced corned egg), hai dai (海帶, kelp), dou gan (豆乾/豆干, hard bean curd), dou pi (豆皮, tofu skin), zhu xie gao (豬血糕, pig’s blood cake), tian bu la (甜不辣, tempura), and zui bian rou (嘴邊肉, pork jowls), just to name a few. You can find lu wei stands on the streets, in night markets, diners, or restaurants.

Cold And Hot Lu Wei (滷味)
Lu wei can be divided into two types: cold and hot. To make cold lu wei, vendors braise all things together and then wait until they cool down before selling them. There are some ingredients you can only find in cold lu wei such as marinated duck tongues, chicken necks, chicken wings, chicken feet, large pork intestines. As for hot lǔ wèi, you can order/pick the food you want, and then the vendors will cook them with soy sauce and some traditional Chinese herbal medicines. Since it is freshly cooked, you can add some instant noodles, dong fen (冬粉, glass noodles), yi mian (意麵, egg noodles), or some vegetables; these are hot lu wei exclusives.
